This is one of the last truly artisanal companies still working with anchovies in the traditional way in Italy. The anchovy maker in question is Michele Senno, who inherited his passion for the sea from his grandfather, who is the one who taught him the secrets of the trade. 

Everything that comes out of Anciua's artisan workshop is done by hand, from the first cleaning of the fish to the potting. Michele is personally involved in the selection of the fresh anchovies that he buys from the fishermen of Sestri Levante: only the coarsest anchovies are suitable for preservation and in fact Michele chooses those from which he can obtain the best quality fillets.
