There where Liguria and Piedmont meet and the two gastronomic cultures are bound together: the Salumificio Calcagno carries on the Piedmontese tradition of pork, which in the past also spread to the Genoese province of Alessandria and as far as the Scrivia Valley (the Salumificio's current location is Savignone).
The Salumificio Calcagno was founded in 1959 when the founder Franco, after having learned the trade as a boy in Genoa, set up his own workshop. Today, his precious art has been inherited by his son Paolo, who renews it every day, creating genuine salami with authentic flavours.
This raw salami is obtained by processing together the best cuts of pork. It is a medium to coarse-grained salami.
