This extra wild berry jam is made from the wonders of the undergrowth cultivated by the Dalpian farm within the Beigua Natural Park, in Tiglieto in the Val d'Orba in the heart of the Genoa hinterland at 600 metres above sea level in the Ligurian Apennines.
In addition to the fruit, only sugar is used for a truly genuine jam, not least because the company follows a traditional, non-intensive cultivation method and all stages - from fertilisation to care and protection of the plants - are carried out with respect for nature, without the use of chemicals.
Dalpian's extra wild berries jam includes strawberries, raspberries, blueberries, blackberries and currants, which in the hilly terrain and climate of the Ligurian Apennines find the perfect environment that encourages their growth to become those tasty, fragrant undergrowth delicacies we all love.
A very high percentage of the fruit is used in the preparation of Dalpian's wild berry jam, so the final product is genuinely sweet, fragrant and aromatic, and respects the authentic flavour of freshly picked fruit at the right stage of ripeness. The berries are cooked together with sugar in small pots without lids, and in this way all the aromaticity of the undergrowth is concentrated in the jam.
This jam is excellent both as a jam for breakfast and a snack and as a sauce to accompany a cheese board, to be presented as an appetiser especially with strong flavoured cheeses such as blue cheeses (from the Italian gorgonzola to the French roquefort); however, the sweet taste of the berries also goes well with the freshness of the ricotta cheese, but in this case it is recommended to serve as a dessert, e.g. as cheesecake. Also among desserts, this jam is usually served with ice cream and natural white yoghurt. The combination with chocolate is classic.
