The Taggiasca olive is the quintessential Ligurian olive, one of the region's most famous specialities. So when Drago's Genovese bakery had to decide which ingredient to use for its crispy olive focaccia, the choice was obvious, not least because taggiasca olives are much tastier and more aromatic than green olives (which are the ones that are usually used for fresh olive focaccia).
