The extra virgin oil produced by Dinoabbo is made from olives of the taggiasca cultivar that grow in the olive groves owned by the mill, located in 'Valle dei Molini' in the municipality of Lucinasco, in the province of Imperia. The Taggiasca olives are still harvested in the traditional way and are pressed with stone millstones; the olive paste obtained is placed in fiscoli (typical fibre 'cages' with a hole) which, stacked one on top of the other, by natural pressure cause the oil to flow out.

Extra Virgin Olive Oil Riviera Ligure - Riviera dei Fiori DOP Cultivar Taggiasca (olive variety) is an Italian oil produced by the Dinoabbo oil mill with Taggiasca olives grown in their own olive groves in the municipality of Lucinasco, in the province of Imperia, an area with a historical tradition of oil production. This Ligurian oil is of superior quality and is characterised by a fruity, delicate and sweet flavour, with no bitter or spicy notes. Because of these organoleptic properties, it is particularly recommended to use raw for seasoning, marinating but also just to embellish dishes - such as meat or fish tartare - as only a few drops are needed. It is the recommended Ligurian extra virgin olive oil for making a perfect pesto alla genovese.

How Dinoabbo's Extra Virgin Olive Oil Riviera Ligure - Riviera dei Fiori DOP is made

This Ligurian oil is made from a blend of oil affiorato and centrifuge oil. Olio affiorato is also known in Liguria as 'Öiu de s'ciappa', an extra virgin oil that is extracted by the natural pressure of the olive paste placed inside stacked 'fiscoli' (rope filtering discs), then left to decant to allow the separation of the oil from the vegetation water, and finally left to rest in stone vats, dug into the rock, at a temperature between 13°C and 16°C, until bottling.

According to the specifications, the Extra Virgin Olive Oil Riviera Ligure - Riviera dei Fiori DOP must be produced with at least 90% of taggiasche olives, a precious cultivar, one of the few that can be used both to make table olives and to produce a much sought-after oil. The quality is also kept high by the artisanal workmanship, in fact all the olive groves in the area are still cared for in the traditional way: the steep terrain and consequent terracing have meant that over time practices and knowledge have developed that are still valid today and used by the Imperia growers.
