A jam made from Taggiasca olives, ginger and aromatic herbs from the Mediterranean (e.g. thyme) that you absolutely must try to accompany your favourite cheeses. We especially recommend combining this Taggiasca olive marmalade with fresh cheeses such as goat's cheese or with a more local prescinseua, which with its sour notes goes very well with the sweet-and-sour taste of the compote. The compote can also be used as a chutney to serve with roasts, grilled meat and boiled meat.
This sweet-tasting and very fragrant compote originated as a family recipe prepared with olives from the farm's own olive groves, which extend on the slopes of Mount Gazzo 700 metres above sea level, inland from Imperia.
