Tapenade is a French speciality from the Provence region, an area that has much in common as a gastronomic culture with western Liguria given its proximity. It was therefore natural for La Baita & Galeano, a small farm in the interior of the province of Imperia, to play with typical local ingredients to recreate a new tapenade: we who have already tasted it can confirm that the experiment was successful!
Tapenade is a pâté of chopped olives with flavours and aromas, excellent to spread on bread and bruschetta or to use for stuffing roasts and making chicken rolls.
All the ingredients used come from the direct production of the farm, which has its own vegetable gardens and olive groves from the terraces that climb up Mount Gazzo.
