Absolutely not to be missed is the Sardenaria reinterpreted by l'Anciua: the Sardenaria is a focaccia seasoned with tomatoes and anchovies, typical of Sanremo; Michele Senno, a Ligurian anchovy maker, has chosen to pay homage to this recipe by inventing a ready-made condiment with the same ingredients (starting with his fantastic anchovies) that can be used with bruschetta or to create appetisers and stuff focaccias.
A nice glass of chilled Vermentino will accompany the tasting.
