Franco Calcagno began when he was just a boy to learn the art of meat processing: he started at the age of 14 in Genoa as an employee and then in 1959 he decided to take the plunge, to set up his own business and open his own workshop. Today, it is his son Paolo who carries on this noble tradition. The Salumificio Calcagno is located in Savignone, in the Scrivia Valley, an area that has always been between Liguria and Piedmont, and in fact it is precisely from Paolo's ancient Piedmontese knowledge that he takes great inspiration to create cured meats with genuine, authentic flavours.
