Cantabrian anchovies are widely regarded by chefs and food lovers as among the finest anchovies in the world. Their exceptional quality is the result of a unique natural environment combined with generations of traditional craftsmanship.
The cold, plankton-rich waters of the Cantabrian Sea allow the anchovies to develop firm, meaty flesh and an intense yet refined flavour. Fishing takes place only during spring, when the fish reaches its ideal balance of fat and texture.
They are then hand-filleted and preserved in olive oil, which enhances their tenderness and preserves their exceptional quality.
