Cantabrian anchovies are regarded by chefs and food lovers as among the finest in the world. Their outstanding quality comes from the cold, plankton-rich waters of northern Spain and generations of traditional craftsmanship.
Caught exclusively during the spring fishing season, when they reach the ideal balance of texture and fat, the anchovies are carefully selected, salted and slowly matured for several months. This ageing process gives them their firm, meaty texture and rich yet balanced flavour.
The fillets are then hand-prepared and preserved in olive oil.
Each tin contains 21 anchovy fillets, perfect for antipasti, bruschetta, salads, gourmet pizzas and Mediterranean recipes.
