Salted Cantabrian anchovies represent one of Europe's finest fish-preserving traditions. Salting has been used for centuries not only to preserve fish but also to enhance its flavour, producing anchovies with a firm texture, remarkable depth and a rich, balanced taste.
Caught during the spring fishing season in the cold waters of the Cantabrian Sea, the anchovies are carefully selected, layered with sea salt and slowly matured for several months.
The Cantabrian salting tradition owes much to Sicilian master salters who brought their expertise to northern Spain at the end of the nineteenth century.
