Primigenio chocolate was born from the discovery in the archives of the Buffa chocolate factory of a historical document dating back to the early 1900s that contained the recipe for this raw chocolate, which has been interpreted to meet contemporary tastes.
Processing is still done entirely by hand and involves the low-temperature blending of cocoa mass with cane sugar, which remains in crystals thus giving a pleasant crunchy feeling as we enjoy this chocolate. The cane sugar is present in the right amount to balance the characteristic naturally bitter cocoa flavor.
