In Genoa, meatloaf has always been made with potatoes and vegetables, and this is how we do it too! For our meatloaf, we have also rediscovered ingredients from older versions that had been lost in the modern recipe, such as dried mushrooms (always a much-loved ingredient in Genoese cuisine), which give it even more flavour.
Genoese vegetarian meatloaf can be eaten as a single vegetarian dish, or made into cubes and squares it can also be served as an appetiser and to accompany aperitifs.
It can be eaten at room temperature and is therefore also good for a lunch break at work, since there is no need to reheat.
