Head cheese (also known as soppressata) is a typical cured meat from Genoa and Liguria, born from the local rural tradition.
It is made from parts of pork that are boiled, hand-cut and mixed with the addition of salt, spices, and local flavors and aromas. It has a strong and distinctive taste.
You can serve it on your cured meat board, but it is also excellent cut into cubes and added to salads, or simply dressed with a little olive oil and lemon.
