Mostardella from Sant'Olcese is a fresh salamella typical of that village in the hinterland of Genoa. We could say that it is a cured sausage, a little bit salami and a little bit sausage.

It is eaten raw in thick slices (excellent with warm bread) but above all cooked on the grill, grilled, seared in a pan: in ancient times it was eaten after being heated over the stove.

Like Sant'Olcese salami, mostardella is made from a mixture of beef and pork.
