Stuffed pasta with the typical wild Ligurian herb, whose young leaves are used for their delicate flavour in many traditional dishes: from minestrone to omelettes to, precisely, the filling of ravioli. Although the name might make one think of a vegetarian recipe, it is not, however, a raviolo di magro (like pansoti, for example, which are made only of vegetables and cheese) because meat is also present in their filling. The shape is the typical square with a scalloped edge.
Raviolo lends itself to the most diverse seasonings: even with simple butter, a few sage leaves and a good sprinkling of Parmesan cheese. They can also be prepared with mushroom sauce or the Genoese meat sauce, tocco.
