Our tuccu is a fresh sauce, made according to the traditional recipe from a single piece of meat that is cooked for several hours with the tomato and flavours. In Genoa, there are two schools of thought regarding tuccu: since the piece of meat should not completely fall apart at the end of cooking, there are those who prefer to serve it separately as a main course; others (including us at Trattoria Cavour), on the other hand, think it is tastier to use the whole meat for the sauce. We recommend using this rich meat sauce to season ravioli.

Each jar is equivalent to about 2 or 3 servings.
