Michele is one of the last true anchovy makers around: he learnt his trade from his grandfather Bruno, a fisherman who used to sail the Tigullio Gulf with his boat, and like him still does everything by hand.
"L'Anciua' is Michele's craft workshop. Here, he processes the fresh anchovies that arrive in the morning in the port of Sestri Levante, cleans them during the day and puts them under salt to mature; then after a few months they are ready to be potted in extra virgin olive oil.
Savouring the anchovy fillets of 'L'Anciua' you can perceive all the care Michele takes in the processing: the anchovies are exceptionally meaty for being caught in Italy thanks to hand filleting and a special drying method that allows for an iodized flavour, which tastes of the sea and not of salt.
