Head cheese, also known as soppressata, is a traditional cured meat from Genoese and Ligurian gastronomy, closely linked to the region’s historic rural tradition.

It is made from different parts of pork that are first boiled, then hand-cut and prepared with salt, spices and typical local aromas. The result is a rich and distinctive flavor.

It is perfect served on a charcuterie board, but it also works very well cut into cubes in salads or simply dressed with a drizzle of olive oil and lemon.
