Croxetti are a very old pasta, typical of the Riviera del Levante, especially of the hinterland area around Varese Ligure (Alta Val di Vara): they are characterised by their disc-like shape, on both faces of which an engraving is stamped; in ancient times, each local family had its own press with the crest with which it stamped the croxetti - in the same way as if they had been coins.
In addition to its cultural importance, the engraving also has a gastronomic reason because the relief allows the seasoning to be picked up better and is pleasing to the palate.
It is recommended to accompany the croxetti with Genovese pesto or a 'pesto' of pine nuts and fresh marjoram.
