Potato gnocchi are, together with trofie, the most commonly used fresh pasta in Genoa to be served with Genovese pesto: Indeed, according to some, it was in the Ligurian main city that the term 'troffia' was first used to identify potato gnocchi and not what we know as trofie; the pasta we now call 'trofie' and which resembles shavings of pasta was for a long time an exclusively homemade and local pasta format in the Golfo Paradiso area (near Genoa, Riviera di Levante) and until the 1960s had had very little use even in Genoa.
A very versatile pasta format, potato gnocchi are excellent for many Italian recipes.
