This is a ready-made dressing for pasta and bruschetta that pays homage to one of the traditional fish recipes of the Gulf of Tigullio, bagnun di acciughe!
The bagnun di acciughe is a soup of fresh anchovies with tomatoes and gallette del marinaio - the sailor's bread - typical especially of Sestri Levante and Riva Trigoso (which also hosts a special festival).
This 'U punentin' is made with semi-dried tomatoes, salted anchovies, onion, garlic and parsley: a knife-chopped chop, perfect as a quick sauce.
Excellent for creating appetisers and fabulous aperitif snacks to be accompanied by fresh local white wine from the Tigullio Gulf such as Bianchetta Genovese or Vermentino.
