This is a ready-made dressing for pasta and bruschetta that pays homage to one of the traditional fish recipes of the Gulf of Tigullio, bagnun di acciughe!
The bagnun di acciughe is a soup of fresh anchovies with tomatoes and gallette del marinaio - the sailor's bread - typical especially of Sestri Levante and Riva Trigoso (which also hosts a special festival).
This 'U punentin' is made with semi-dried tomatoes, salted anchovies, onion, garlic and parsley: a knife-chopped chop, perfect as a quick sauce.
Excellent for creating appetisers and fabulous aperitif snacks to be accompanied by fresh local white wine from the Tigullio Gulf such as Bianchetta Genovese or Vermentino.

With this product, Michele Senno, an artisan of the sea and owner of Anciua, wanted to pay homage to the dish that symbolises his land, bagnun di acciughe, the fish soup made from fresh anchovies with tomatoes and sailor's biscuits, typical of Sestri Levante and Riva Trigoso (a village in the Gulf of Tigullio that in July also hosts a festival dedicated to anchovy bagnun).
U punentin can be used to season pasta and to make bruschetta. It is excellent for creating appetisers and fish snacks for your aperitif, to be brought to the table with an excellent and fresh local white wine such as bianchetta genovese (if you prefer a Ligurian wine with bubbles then we recommend the sparkling lumassina, even though it is a product of the other Riviera).
L'Anciua is an artisan workshop that still hand-processes its anchovies, as Michele's grandfather had taught him when he was a child: it starts with an extraordinary Italian raw material from our seas, which is then cleaned while still very fresh and put in salt; after a few months of maturation, these anchovies are filleted and dried (a special low-temperature process for a more delicate final flavour), then they are ready to be used and put in the jar together with the other ingredients.
