A bit like pesto and Genoese people, every Indian family has its own recipe for madras curry. Known more correctly as masala, it is a mixture of spices and herbs used to flavour dishes (from meat to rice to soups).
This version by Daniel Fida is made with ingredients almost all grown by him in his fields in Piane di Rosso (in the Genoese heights), where he grows his saffron and other aromatic and wild herbs. Daniel grinds only small quantities from time to time so that he always has a fresh, aromatic curry powder.
This mix of spices returns all the flavours and aromas of the Ligurian hills to our plate.
