It is considered the most prestigious wine of the Savona area. According to some, the name Pigau derives from Piga, macchia, because the berries are dotted with small marks. The area of choice for dry Pigato is the municipality of Ortovero. It has a straw-yellow colour with greenish reflections, an intense aroma and a warm, slightly 'almondy' flavour. Excellent as an aperitif and with fish, to be served at 6-8°, it perfectly accompanies certain dishes of Ligurian cuisine such as stuffed lettuces, cappon magro, and cuttlefish in zimino.
