Prescinsêua is a typical fresh cheese from Genoa that is used in many local recipes: it can also be eaten as it is, seasoned or spread, but its major use is as an ingredient, usually for fillings and stuffing in savoury pies (e.g. pasqualina and other vegetable pies) and ravioli (in our Ligurian case, especially pansoti).
