Pansoti are ravioli typical of the villages along the eastern Ligurian Riviera, especially those in the province of Genoa. They have a pot-bellied shape (hence the name) and the filling is lean, i.e. without meat, but only herbs and cheese.
The only condiment for this stuffed pasta is usually walnut sauce, a 'pesto' made from walnut kernels, garlic, oil, marjoram and bread soaked in milk or fresh cheese (depending on the area). There is no bread or cheese or other lactose-containing products in our walnut sauce, giving you the freedom to choose what to add according to your taste or diet preferences.
One jar of walnut sauce will season up to a kilo of stuffed pasta.
