It is a cake invented by Vincenzo Drago to pay homage to the city of Genoa and its traditions, choosing to use, in addition to the typical ingredients of local pastry, an element that is a symbol of Genoese gastronomy, basil.
It is a doughnut made of soft buttery shortcrust pastry, which may remind you of the Genoese pandolce basso in terms of its consistency: the surface, however, is crispy due to the presence of sugar crystals and inside we find the right balance between sweet and aromatic given by the combination of dried figs, candied orange paste and toasted hazelnuts; finally, the basil adds a pleasant fresh note.
