The chestnut and chocolate cream from Ca di Voi is something exceptional: it is not the usual chocolate cream, but a perfect, unprecedented combination. The dried chestnuts of Calizzano and Murialdo are a Slow Food presidium, because they are still processed according to the traditional local method, which involves drying them inside the ‘tecci’, the typical stone drying kilns of the Upper Bormida Valley, in which the wood is burnt: the fire dries naturally with the heat, leaving the chestnuts with a pleasant toasted and slightly smoky note.
